Configuration of the Routix AI Copilot: whether staff may use it, on which data and which automatic actions are allowed.

What the Copilot does and does not
- Does: read, suggest, draft orders/quotations from text or email, answer questions.
- Does not: change or delete existing records, freeform writes, direct DB mutations.
Every AI creation carries metadata (source, confidence, status) so finance/operations can review.
